Ruby Wife's Yummy Granola

2 1/2 Cups of regular rolled oats--NOT instant
1 to 1 1/2 Chopped or Sliced nuts or seeds. Pecans and almonds are what I use.
1/2 Cup of Wheat Germ--Be sure to store it in the refrigerator.
1/2 Cup shredded coconut
1/4 Cup of flour, white or whole wheat
1/4 Cup nonfat dry milk
2 Tablespoons light brown sugar, packed
1/2 Teaspoon ground cinnamon
1/2 Cup Canola oil
1/2 Cup clover honey
1/2 teaspoon salt
1/2 Cup of craisins, or any dried fruit--cherries, apricots, raisins.

Directions:
*Preheat oven to 300 degrees.
*In a large bowl, combine oats, nuts, wheat germ, coconut, flour, dry milk, brown sugar, and cinnamon. Mix thoroughly.
*In a small bowl mix oil, honey and salt; then pour over dry ingredients. Hint: Measure the canola oil before the honey. This will help the honey slide out of the measuring cup.
*Mix thoroughly.
*Spread in a rimmed baking dish. I use a rectangle glass 9 x 13 sprayed very well with nonstick cooking spray.
* Bake for 30-40 minutes stirring every 10 minutes. You need to keep a close eye on the granola during the last 10 minutes to make sure it does not burn. It should be nice and golden brown when it's done.
*Remove from oven and stir in dried fruit then cool.
*Continue to toss until cool to avoid clumping.
*Store in an airtight container.

Makes 5 Cups.

I serve it with lowfat Vanilla yogurt on top! Yummy good breakfast or snack for kids. I've also made a cereal out of it. Just add some milk.
